When meeting or talking with potential photographers, make sure of several things. One, does the person seem receptive to you and to your ideas, as opposed to saying "well, these are the photos that will be taken during your wedding". Two, that the photographer is taking the time to talk with you, and is not rushed or hurried or preoccupied. Third, ask yourself, how has this person's communication with me been? Fourthly, how do I get along with this photographer? Do we "click" or "jive"? The key is to balance all of these considerations along with your budget considerations.
Some couples can afford to spend $2500 on just the photographer. Most people, however, cannot and frankly should not. Consider your budget when booking any part of your wedding. The old saying of "You get what you pay for" does not always apply. Most photographers make their money selling expensive "packages", wherein you still don't end up with many photos. Many charge extra for digital files. Some charge for permission to print or use the digital files.
